胡适先生最爱的一道菜,也是他夫人江东秀最擅长的一道菜,以他命名。胡适先生是徽州绩溪人,所以这道菜属于徽菜系。这道菜由多种食材组合而成,采用了炖煮等烹饪技法,把肉类与蔬菜组合在一起制作而成。先用蔬菜垫底,再将鸡肉、鸭肉、猪肉、火腿等一层层的往上叠,用盐、黄酒等调味,最后注入高汤,慢火煨煮,味道鲜美。
