江湖菜是中国社会上无流派，无传承的一个民间 菜系，没有制作的规矩，也没有制作的要求，以性价比高，好吃而成菜，所以称为江湖菜。 江湖菜的口味较重，制作手法较单一，以快而立。常见的江湖菜集中在路边小店、大排档、亱宵等场景，江湖菜的地方风味较重，适合当地口味。
