趙四小姐是張學良的夫人,但燒得一手好菜,其中豆腐煮魚、清燒豌豆、砂鍋魚頭等都是十分有名及美味的。
豆腐煮魚,把小魚去鱗,除去內髒,片刀切,入油鍋烹炸。用豆腐與小魚一起煨成鮮湯,再放入筍片、木耳,煮成雪白、鮮美的魚湯。
砂鍋魚頭,也十分美味,由趙四小姐帶到了美國。
