中国古馔文化之民国粉蒸仕女Powder steamed Lady of Republic of China
粉蒸仕女是中国民国时期四川一道名菜,是用牛肉(猪肉)、大米、土豆制成。把大米、糯米炒干磨成粉,牛肉切成薄片,用油、酱油、豆瓣、胡椒粉、大米粉、糯米粉拌均匀,用土豆垫底,放入碗中,蒸熟即可。蒸出的牛肉鲜嫩、粉香,就像美丽、粉嫩的仕女,名叫粉蒸仕女。
The Powder Steamed Lady is a famous dish in Sichuan during the Republic of China Period. It is made of beef(pork), rice and potatoes. Fry rice, glutinous rice and grind them into powder. Slice beef(pork), and mix well with oil, soy sauce, watercress, pepper, rice flour, glutinous rice flour,put the potato in the bottom of a bowl with the beef(pork) to steam.The Powder Steamed beef(pork) is tender and powdery, like a beautiful, pink lady, so it is named Powder Steamed Lady.
