紅油耳絲是國四川一道著名小吃,是由豬耳朵制作的,豬耳朵是豬頭的一部分。豬耳朵在民國屬於酒饌類(下酒的菜)。把豬耳朵鹵制好後,切絲,拌上油辣子等調料。由於整個豬耳都是軟骨,口感爽脆,咬在嘴裏,吱吱作響。
中國除了豬的耳朵能做出這道名菜,沒有其它動物的耳朵能做出菜了。就是因為獨特的口感,耳朵不肥不瘦,只有脆骨,咬嚼十分有味道。
Wine Steamed Spicy Slice Pig Ear is a famous snack from Sichuan, which is made from pig ears. Pig ears are part of the pig's head.
Pig ears were treated as the dish going with wine back in the Republic of China. After pot-stewing the pig's ears, then shred them, and mixed them with flavorings such as hot peppers. Due to the cartilage structure of entire pig ear, the taste is crisp, and creaks when biting in the mouth.
