Old Glutton Talk on "Xishi Tongue Soup"
Xishi tongue is a type of seafood from the coastal waters of China. Resembling a human tongue, it is snow-white, fresh, and tender, hence the name Xishi tongue. "Xishi" was a legendary beauty in ancient China with fair skin and nation-toppling charm, so this delicacy was named after her. Records of Xishi tongue in China date back a thousand years. In Tiaoxi Yuyin Conghua (Collectanea of the Fisherman Recluse of Tiaoxi), the Song Dynasty literatus Hu Zi wrote: "In Lingkou of Fuzhou, there is a genus of clam called Xishi milk, which is extremely sweet and crisp," documenting the deliciousness of Xishi tongue. Xishi Tongue Soup is prepared using Xishi tongue as the main ingredient. Chicken and lean pork are sliced and steamed with water for a long time; the Xishi tongues are then placed into the steamed broth and seasoned with salt before serving. The soup is exceptionally savory, combining the rich and mellow flavor of chicken broth with the fresh tenderness of Xishi tongue, making it a true delicacy on earth.
