中國民国北京茶館裏的爛肉面Minced Meat Noodles in Beijing Teahouses During the Republic of China

The bowl of minced meat noodles in Lao She's play Teahouse reflects a period of extreme social turbulence in China during the late Qing Dynasty and the early Republic of China. This bowl of minced meat noodles was an affordable and delicious food created by the teahouse owner at the time for the people at the bottom of society. The minced meat noodles are prepared by selecting a balanced mix of fat and lean pork from cuts such as the rump, the upper leg, and the pork belly. The meat is blanched with cooking wine, and once cooked, it is diced into small cubes. Then, it is stewed and stir-fried together with seasonings and ingredients like sweet bean sauce, ginger, garlic, spices, shiitake mushrooms, wood ear mushrooms, and soy sauce until it becomes meltingly tender, before being poured over the noodles. Upon entering the mouth, it is soft, glutinous, aromatic, and smooth; the noodles are thoroughly coated with the rich sauce, making it quite excellent.
