Eating eel has a long history in China. In ancient China, there were numerous methods for cooking and eating eel. Over 1,000 years ago, during the Southern Tang Dynasty in China, there was a famous figure who was exceedingly fond of eating eel. He is Han Xizai, depicted in the ancient painting "The Night Revels of Han Xizai." He was a renowned minister of the Southern Tang Dynasty in China, as well as a famous literary figure. He could not go a single meal without eel. Tao Gu of the Northern Song Dynasty recorded in his "Qing Yi Lu" (Records of the Pure and Strange): "Ziwei Lang Xizai of Jiangnan is extremely fond of eel dishes. The chefs whispered among themselves: 'Zhongshu Han's very life depends on eel dishes.'" This documents Han Xizai's love for eating eel. His life was essentially sustained by meals of eel. This left behind the legend of "A Life Sustained by Eel."
