1982中国重庆凉粉China Chongqing Tossed Clear Noodles with Chili Sauce
1982年的中国重庆正处于中国改革开放的初期,当时很多人都萌生了做生意的想法。由于整个社会处于资本初期,于是摆个小摊位,售卖食物成了普通人最常见的一种生意赚钱动作模式。当时的重庆街头出现了一种重庆传统美食“重庆凉粉”。重庆凉粉是由一种豌豆粉或黄豆粉加工而成,再配上重庆油辣子、蒜水、花椒粉、香醋等调料一起搅拌食用。凉粉口感软糯,口味麻、辣、冷、香,是重庆一道著名美食。
In 1982, Chongqing, China, was in the early stage of China's reform and opening-up. Many people at that time wanted to start their own businesses. As the society was in the early stage of capital development, setting up small food stalls became the most common way for ordinary people to make money. Chongqing Cold Jelly Noodles, a traditional local delicacy, first appeared on the streets of Chongqing in that period. It is made from processed pea flour or soybean flour, mixed with seasonings such as Chongqing chili oil, garlic water, pepper powder and black vinegar. Featuring a soft and glutinous texture, the cold jelly noodles boast a numbing, spicy, refreshing and savory flavor, making it a signature dish of Chongqing.
