1980 Sesame Paste Noodles from Chengdu, China

In the 1980s, sesame paste noodles were created in Chengdu of Sichuan Province, China. Fresh large bones are selected and simmered into a broth, which is then used to boil the noodles. A sweet soy sauce is reduced from seasonings like soy sauce and sugar, and is then tossed with the noodles along with chili oil, sesame paste, and other condiments. The profile offers a rich, numbing, and aromatic flavor; the noodles, having been boiled in the bone broth and thoroughly coated with the sauce, are incredibly savory.
