中國唐朝詩人杜甫《槐葉冷淘》Chinese poet of Tang Dynasty, Tu Fu "Huai Ye Leng Tao"

杜甫是中國唐代著名詩人，《槐葉冷淘》是他寫的一首詩，這首詩記錄的是當時中國唐朝時的著名美食“冷面”，這種冷面以槐葉的汁液與面混合在一起製作而成，口感清爽，是夏天食的冷面。到了宋代，冷面（冷淘）的品種更多了，有鹵肉淘、槐葉淘、甘菊淘、醃菜淘等。冷淘是把麵條用凉水過一遍，再加入其它輔菜凉拌而成。

Tu Fu is a famous poet in the Tang Dynasty of China. "Huai Ye Leng Tao" is one of his poems. This poem records the famous "cold noodles"of the Tang Dynasty in China, which is made by mixing the cold noodles and the juice of Salvinia natans leaves. It has a refreshing taste, and is a cold noodles for summer. In the Song Dynasty, there were more varieties of cold noodles (cold wash), such as braised pork, oyster leaf, chamomile, pickles and so on.The procedure for cold wash is to wash the noodles with cold water and then add other auxiliary ingredients.
