这道菜源自香港避风塘系列。“避风塘”是香港在19世纪修建的供当地渔船躲避台风的人造港湾。在上世纪60年代,避风塘里的渔民们在避风塘躲避台风时闲暇时间里就烹饪风味菜肴,其中一位渔民用炸蒜、面包糠炒制螃蟹,表面金黄,外酥里嫩,蒜香浓郁,被取名“避风塘炒蟹”。在70、80年代后,渔民离开了捕鱼生活,来到岸上开办了大排档餐厅,这道菜在大众视野里出现,其美味也受到了大家认可,并延伸出了“避风塘鸡翅”,“避风塘大虾”等避风塘系列。避风塘系列的特点是蒜蓉、面包糠等配料混合炒制。避风塘鸡翅是将鸡肉用鸡蛋黄等调料腌制,再裹粉粙炸,用蒜蓉、面包糠配料一起炒制,浓浓的蒜香配上面包糖带来的酥脆感,内里鲜嫩多汁,不错的口味,色泽金黄也是避风塘的外观特征。
This dish originates from the Typhoon Shelter series of Hong Kong. A "Typhoon Shelter" is a man-made harbor built in Hong Kong in the 19th century for local fishing boats to seek refuge from typhoons. In the 1960s, fishermen in the typhoon shelters would cook flavorful dishes during their leisure time while hiding from typhoons. One of the fishermen stir-fried crabs with fried garlic and breadcrumbs, creating a dish with a golden surface, a crispy outside and tender inside, and a rich garlic aroma, which was named "Typhoon Shelter Fried Crab". After the 1970s and 1980s, the fishermen left their fishing lives, came ashore, and opened open-air food stalls. This dish appeared in the public eye, and its deliciousness was recognized by everyone, leading to the extension of a Typhoon Shelter series that includes "Typhoon Shelter Chicken Wings" and "Typhoon Shelter Prawns". The characteristic of the Typhoon Shelter series is the mixed stir-frying of ingredients such as minced garlic and breadcrumbs. Typhoon Shelter Chicken Wings are made by marinating chicken with egg yolks and other seasonings, coating them in flour, deep-frying them, and then stir-frying them together with minced garlic and breadcrumbs. The strong garlic aroma combined with the crispiness brought by the breadcrumbs, along with the fresh, tender, and juicy inside, provides a great taste. A golden-yellow color is also the visual characteristic of Typhoon Shelter dishes.
